Blueberry Lime Jam

BLUEBERRY-LIME JAM
4 1/2 C crushed fresh blueberries (approx 6 C whole ) 1 Tbsp lime zest 1/3 C fresh lime juice 7 C sugar 1 bottle or package (2 pouches) Certo (pectin product)
Wash and drain blueberries. Crush in large bowl with a potato masher or buzz in a food processor to produce the required 4 1/2 cups.
In a large pan place berries, lime peel, lime juice and sugar, mixing well. Bring to boil, stirring until the sugar is dissolved, then bring mixture to a full rolling boil. Boil hard for one minute. Remove from the heat and stir in the liquid pectin, stirring a few minutes to cool slightly.
Carefully ladle into hot sterilized jars. Leave approx 1/4 inch head space if sealing with paraffin wax. Or seal with jar lids. Yield: approx five 12 ounce jars.
