Crisp Cabbage Relish
3/4 cup sugar
1/2 cup distilled white vinegar
1 1/2 tsps salt
1 tsp celery seed
3/4 tsp pepper
1 2 1/2 - pound cabbage, cored, quartered, thinly sliced
4 large carrots, peeled, grated
2 large celery stalks, chopped
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
Combine sugar, vinegar, salt, celery seed, and pepper in a large
glass bowl; stir until sugar dissolves.
Add cabbage, carrots, celery, red bell pepper, and yellow bell
pepper; toss to blend.
Cover relish and refrigerate at least 4 hours, tossing occasionally.
