Orange Peel Candy
Prepare peels by slicing into nice strips. Use a spoon or something to scrape away as much of the white stuff as you can. The white stuff can be bitter and doesn't cook up as nicely as the peel.
Boil the peel strips in a few changes of water. Start with cold water and peels, bring to a boil, pour off the water and do it again. Three or four times if you need to, until the bitterness is gone and the peels are pretty tender.
Make up a plain sugar syrup. Start with sugar in a pot and add enough water to make a medium-thick syrup. Watch the heat - you don't want to syrup to caramelize. Add peel and simmer until the peels are transparent.
Lift the peels out with a slotted spoon, roll in granulated sugar and arrange on waxed paper to cool and set.
Optional: add a pinch or two of aromatic spices to the syrup. cinnamon, nutmeg, etc.
This works with orange peel, lemon peel, etc.
