Candied Kumquats

Kumquats 3 cups kumquats 2 cups water 3 cups sugar Place kumquats and water in a saucepan and boil for 30 minutes. Add the sugar, boil for another 10 minutes then turn off the heat. Leave overnight. Next day bring the mixture to the boil, but be careful it does not burn. As soon as it starts to bubble turn off the heat and leave the fruit in the syrup until cool.
You can then cover the kumquat candies in chocolate, use them to decorate cakes , or just eat them plain as an after-dinner treat.

I think the best way to serve this would be as a garnish with an entree of pork or chicken. The flavor is very intense so you wouldn't want to eat a bowlful of them.
