Caramel Apple Butter
15-20 apples 2 c. water 6 c. sugar 1 t. ground cloves 1 1/2 t. ground cinnamon 1/2 t. ground ginger 2 T. lemon juice
Wash apples and slice (don't peel or core). Cook in water until soft (30 min.) Put apples through food mill or colander (you should have about 8 cups of pulp). In a skillet, heat 1 1/2 cups of your sugar until it melts and caramelizes (medium brown). Pour into pulp and stir until it all dissolves. Stir in all of the other ingredients. Cook for about 45 minutes or until it's thick. You'll have to stir quite often so it doesn't stick. It's ready to go in the jars. Process.
