Fresh Cherry Chutney
2 cups cider vinegar
1 (1 pound) box brown sugar
5 cups diced onions
2 limes, finely chopped
3 Tbsp minced fresh ginger
2 Tbsp minced garlic
1 tsp or more to taste hot red pepper flakes
2 pounds sweet, piited and halved cherries
3 1/2 cups Granny Smith apples, peeled and coarsely choppped
1 cup golden raisins
1 cup port
Combine vinegar, sugar, onions, limes, ginger, garlic, red pepper.
Heat to boiling then simmer 25 minutes, uncovered. Stir in rest of
ingredients, heat to boiling, simmer about 40 minutes. Leave in a
cool place overnight.
Heat to boiling, stirring frequently, until thick and syrupy. Ladle
into jars and seal.
