Chili Corn Relish

30 med-size ears of corn, husks & silk removed
1.5 cup diced green bell pepper
1.5 cup red bell pepper
1.5 cup diced onion
1 .5 cup diced celery
4.5 tsp salt
2.25 cups sugar
1.5 tsp celery seed
.75 tsp turmeric
6 tbs chili powder
2 Tbs crushed red pepper
6 garlic gloves, minced
5 cups distilled white vinegar

Carefully cut kernels from cob (do not scrape cobs). In a large
kettle, combine corn and remaining ingredients. Boil gently,
uncovered, 15 minutes.

Ladle into hot jars, leaving 1/4 inch head space. Process 15
minutes in bwb. Yield is about 15 pint jars using medium large
ears of corn.
