Cranberry Chutney

1 1/2 c fresh cranberries
16 dried apricots, quartered
3/4 c brown sugar
1/3 c dried currants (raisins substitute well)
2 T minced fresh peeled ginger
2 T cranberry cocktail juice
3/4 t ground cumin
1/4 t cayenne pepper (I like spicy, so I use 1/2 t)

Combine all ingredients in a heavy saucepan and cook over medium
heat to dissolve sugar. Increase heat and boil for 3 minutes.
Transfer to a bowl and cool. You can serve warm or cold. Great
on leftover turkey sandwhiches!
