Cucumber Relish 01

Cucumber Relish Yield: 6 Pints 6 c coarse ground or chopped cucumbers 2 c coarse ground or chopped green bell peppers 2 c coarse ground or chopped red bell peppers 1 c coarse ground or chopped onion 2/3 c salt water 1 qt white or cider vinegar 1 c sugar, optional 2 tb mustard seed 1 tb celery seed 2 hot red peppers
Mix the ground or chopped vegetables with the salt and six cups of water. Let stand about 3 hours. Drain, rinse in cold water, and drain again well.
Bring the vinegar, sugar, mustard seed, celery seed and red peppers to a boil in a large pan, stirring until the sugar dissolves. Boil 5 minutes, add the drained chopped vegetables and return to a boil.
Remove from the heat immediately and turn into hot sterilized jars. Seal at once.

When poured into jars it seemed to runny and had to be strained
