Summer Fruit Compote 4 nectarines 1 papaya 1 mango 1/3 cup tangerine juice 1 T grated tangerine rind 1/4 cup sugar 1/4 cup brown sugar 2 T cognac 1 oz bittersweet chocolate, grated 3 T toasted chopped pecans simple syrup Peel, seed/pit,and chop fruit into 1/2 in pieces. Combine all but simple syrup and pack in jars leaving 1 in head space. Add syrup to cover and seal. Invert jars and refrigerate at least 1 week before eating.
Note: this is kept in fridge and only stays around for about two weeks.
