Ginger pears

2 1/2 kg unripe pears (preferably small, maybe the sort Winter Nelis is
the best?)
1 kg sugar
4 sticks ginger
3 dl water

Unripe pears are washed, give it a short boil and peel them thinly.
Sugar is boiled with water and ginger for 1/4 hour. The whole pears
is put in water and boil over a very slow heat for about 3 hours,
until tender. High heat make the pears become quite tough to eat.
Put in glass and store them. Can be stored for several years
(fermented is extra delicious, at least if the yeast has made
alcohol of it!). Serve with vanilla ice. The sauce should be thick
and strong.


Parer med ingefar

2 1/2 kg parer
1 kg sukker
4 stk ingefar
4 dl vann

Umodne parer vaskes, gies et oppkok i kokende vann, skrelles.
Sukkeret koker med ingefar og vannet 1/4 time. Parene has i og
koker meget sakte i omtrent 3 timer, eller til de er more Hvis
varmen er sterk, vil parene bli seige.
