Green Tomato Chutney

1 seeded, chopped lemon
1 skinned, chopped clove garlic
5 cups firm, chopped green tomatoes
2 1/2 cups brown sugar
1 1/2 cups raisins
3/4 cup chopped fresh ginger root, or 3 oz. crystallized ginger
1 1/2 teaspoons salt
1/4 teaspoon cayenne
2 cups cider vinegar
2 chopped hot red peppers (optional)

Put all ingredients in a saucepan and simmer until the fruit is
tender. Pour into jars and seal. This will keep in the refrigerator
for a couple of months. For longer storage, put into half pint
jars and process in a boiling water bath for 15 min.
