Green Tomato Mincemeat

16 cups green tomatoes, chopped fine
8 cups apples, diced
2 pounds raisins
1 pound currants
2 1/2 pounds brown sugar
1 pound candied mixed fruit
1 cup vinegar
1/2 pound suet or margarine
2 cups brandy or apple juice
2 teaspoons cinnamon
2 teaspoons nutmeg
2 teaspoons ground cloves
2 teaspoons rum flavoring

Drain chopped tomatoes. Add 1 1/2 quarts water and boil for 1
hour. Remove from heat and leave overnight.

Drain and add all ingredients except brandy and flavorings. Boil
for 2 hours. Then add brandy/juice and flavorings. Seal in
sterilized jars and process in boiling water bath.

NOTES : Makes 4-5 quarts.
