Ground Cherry Jam

Cooking time 40 minutes yield 8 8-oz glasses
6 Cups ground cherries husked, about 1 1/2 lbs. 1 Cup water 8 Cups sugar 2 lemons, juice of 1 1/2 Cups light corn syrup
Combine husked ground cherries and water in a heavy kettle. Heat to boiling. Simmer for 10 min. Add sugar, lemon juice and corn syrup. Simmer 30 minutes. Allow to stand overnight.
The next day, heat jam to boiling. Seal in hot sterilized glasses.
Note: Ground cherry jam makes a thin but delicious jam. For a thicker product, allow the second-boiled jam to stand another day, then bring to a boil a third time and seal in hot glasses.
