Guava Jelly
4 cups guava strips 3 cups sugar 2 cups water 1/2 lemon, cut into small paper thin slices 1 teaspoon grated fresh ginger
Wash guavas, remove stems, blossom ends and blemishes. Cut the fruit into halves, remove soft inner ppulp and seeds with a spoon. Cut guava shells into strips 1/4 inch wide, combine with sugar, ginger and 1.5 cups water. Add 1/2 cup water to lemon slices. Allow both mixtures to stand two to three hours to increase liquid and pectin.
Cook lemon over low heat until rind is transparent, adding more water if necessary. Add lemon to guava mix and boil until juice sheets from spoon and gives jelly test. Seal, etc. Use soft, scooped out guava stuff for other purpose.
