Herb Tea Jelly

4 1/2 cups water
1 cup finely chopped lemon balm, packed well
1 cup dried lavender flowers
5 cups sugar
1 package Sure Jell Pectin

Combine water, lavender, and lemon balm. Bring to a boil. Remove
from heat, cover, and let it infuse for 15-20 minutes (the longer
the time, the stronger the flavor.) Strain well.

Measure out 4 cups of the tea. Add pectin and bring to a rolling
boil (stir constantly.)

Add sugar, bring to a rolling boil for one minute (stir constantly).
Quickly ladel into jars and seal. Invert jars for 5 minutes and
then flip the jars upright. The jars should vaccum seal as the
jelly cools.
