Homemade Pectin 01

Home Made Appel Pectin
Wash 1 Kg. appels (for compote or wild) and cut their stalks. Chop them roughly without peeling, coring, nor seeding. Put in pan and cover with water. Bring to the boil and cook on low heat for 30 minutes. Pass through a sieve or colander and allow to strain for 12 hours. Put the obtained juice in the pan and cook until reduced by half. Put in pots. 15 cl. of this pectin are enough for giving consistence to 1 litre fruit juice.
