Pickled Whole Hot Peppers
3 pounds hot red, green or yellow peppers 3 C distilled white vinegar 1 C water 3 T granulated sugar 1 T pickling salt 4 cloves garlic
Wash peppers. Cut 2 to 4 small slits in each. Blanch in boiling water for 3 minutes. Immediately cool in ice water. Drain well Lightly flatten peppers with a wooden spoon.. In a 3 qt saucepan combine the remaining ingredients except the garlic. Bring to a boil over medium heat. Boil 5 minutes. Place a clove of garlic in the bottom of each hot pint jar. Firmly pack peppers into jars,leaving 1/2 inch headspace. Carefull run a nonmetallic utensil down inside of jars to remove trapped air bubbles. Wipe jar tops and threads clean. Adjust lids and process in a boiling water bath for 10 minutes. Makes 4 or 5 pints. (Be sure to wear rubber gloves when handling hot peppers)
