Jalapeno Jelly

1 cup peppers, chopped
1 1/2 cups apple cider vinegar
1 onion chopped
6 1/2 cups sugar
1 pkg certo or certa

Mix peppers, onion, and vinegar in blender. Place sugar in pot,
stir in pepper mixture. Bring to a boil and keep for two minutes.
Set off heat and cool for five minutes.

Spoon off foam, stir in certo, add red or green food coloring if
desired. Pour into jars.

This is great with cream cheese and your favorite cracker.

I once used blue food coloring when I had added three haberneros
to the batch, and I called it blue blazes. As I remember it broke
a little facial sweat on more than one neighbor.
