Fresh Kim Chee
3/4 pound bok choy or Napa cabbage 1 tablespoon salt 2 cloves garlic, minced 2 green onions, finely chopped or equivalent in finely chopped onion and chives (for dark green flecks) 1 teaspoon finely chopped fresh ginger 1 teaspoon sugar (optional) 1 teaspoon crushed red pepper
Coarsely chop cabbage. Toss in bowl with salt. In half an hour, stir. In another half hour, wash cabbage and drain thoroughly. Mix with rest of ingredients in bowl. Chill, adjust seasoning if necessary, and serve now or later.
This is fresh kimchee - mild and unfermented, a good introduction to kim chees which range from this to wildly hot and smelly. This ages nicely in the refrigerator, gets a little stronger after a week or so.
