Kiwifruit Jam
I peeled the bag of kiwifruit and ground them up in a food processor; not too fine but just enough to leave some pulp. I got about 7 and a half cups of kiwifruit pulp. This is about twice as much as my recipe calls for so I doubled the other stuff.
For a 4 cup of pulp batch I do as follows:
Add one cup of unsweetened pineapple juice.
From here I follow the standard sure jell method which is add 1 package of sure jell to the fruit mixture and bring the stuff to a boil. Then I add 5 cups of sugar and bring the stuff back to a boil ( a good rolling boil ) and let it boil for 1 minute and remove it from the heat.
I let it cool for a while, stirring once in while, because when you pour the jam into jars it wont separate with all the pulp going to the top (about 10 minutes will do it ).
