LEMON CURD
6 lemons 3/4 cup butter 2 2/3 cups sugar 6 eggs, well beaten
In double boiler, melt butter with sugar. Meanwhile, peel and juice lemons. Put rind and juice in blender. Mix at high speed until the rind is in very small pieces. If using a food processor, cut lemons and put in processor. Pulse until rind is in very small pieces. Add to the butter and sugar. When butter and sugar mixture is melted, add eggs, stirring constantly until eggs are completely mixed in. Continue cooking for about 1 hour, or until mixture thickens. Stir often. Be sure not to let the water boil dry in the double boiler.
When cooled, put into jars. Refrigerate. The curd will thicken more when it is chilled.
