Lime Pickle 03

Lime pickles 7 lbs pickling cucumbers sliced into 1/2" chunks soak in 2 cups pickling lime mixed in 2 gallons water overnight. Drain and rinse and soak in clear water for 3 hours, rinse and drain again. Cucumbers will be brittle. Use a non-reactive pan such as a crock or food grade plastic bucket. Make a syrup of: 2 quarts white vinegar 10 cups sugar 2 tsp salt 2 tsp pickling spices 1 oz cinnamon bark 1 tsp cloves 1 tsp celery seed 1/2 tsp mustard seed Tie spices, cinnamon, cloves, celery and mustard seeds in a spice bag. Boil the syrup and pour over cukes. Let stand overnight. Bring to boil and simmer until cukes are clear, about 35 minutes. Remove spice bag. Pack into hot sterile pint jars and seal. Process in BWB canner for 5 minutes.
