Totally Unique Barb Schaller's Famous Mango Strawberry Jam with Kiwifruit
2 cups diced mango (2 whole ones?) 1-3/4 cups crushed strawberries 3/4 cup diced kiwifruit (2 medium) 1/4 cup fresh lime or lemon juice 7-1/2 cups sugar (yeah, it's a lot -- too bad) 2 foil pouches Certo brand liquid pectin
Mix the fruits with the sugar and lime/lemon juice. Follow general instructions for making cooked jam as described on Certo instruction leaflet -- boil sugar and fruit, add pectin, boil, jar, seal, process. Made 8 half-pint jars, two 4-oz jars. Looks spectacular. May be a tad on the stiff side, the quality of the berries will affect that, I've had it on the soft side. Go figure.
None of that nasty floating berries stuff happened, this was setting up pretty durned quick!
Biggest trick of all is finding all the fruits sufficiently ripe at the same time.
