Sherried Mint Jelly

1/2 cup finely chopped mint
1 cup white vinegar
1/2 packet lime jelly crystals
3 TBSP sugar
1/2 cup sweet sherry

Wash and dry mint, chop. Put vinegar and sugar into saucepan stir
until sugar dissolves bring slowly to boil. Reduce heat and simmer
for 3 minutess. Remove from heat add mint and jelly stir until
jelly dissolves. Cool, add sherry. Pour into small glass jars,
stirring occasionally while setting to ensure even distribution of
mint. Seal, keep in fridge. Makes 2 cups.
