Apple-Mint Jelly

1 pkt/bottle pectin (enough for 1.2 L of liquid)
600ml crisp apple juice
600ml white or cider vinegar
4 cups sugar
sprigs of mint plus 3 Tbsp chopped mint
food coloring (optional)

Bring juice, vinegar, and mint (can be tied in a bundle) to a boil
and boil 5 minutes. Sprinkle on pectin and stir until dissolved.
Boil 5 more minutes.
