Vidalia Onion Relish
Yield: 1 quart

2 lb sweet onions (Vidalias), chopped
2 stalks celery, sliced
1 sweet red pepper, chopped
1 tb butter or margarine, melted
3/4 c cider vinegar
1/4 c water
2 tb brown sugar
1 ts celery seeds
1/4 ts salt

Saute onions, celery, and red pepper in butter in a small Dutch
oven 15 minutes or until tender. Add vinegar and the remaining
ingredients to the mixture. Bring to a boil; reduce heat and simmer
uncovered 20 minutes. Store in refrigerator. Serve chilled or at
room temperature.
