Minted Peach Chutney
2 1/2 pounds peaches, peeled, pitted, chopped
1/2 cup chopped red or green pepper
2 Tbs finely chopped onion
2 cloves garlic, minced
1 Tbs minced fresh or 1 tsp dried mint leaves
1/3 to 1/2 cup sugar or NutraSweet Spoonful
Heat all ingredients, except sugar (Nutrasweet), to boiling in
large saucepan; reduce heat to low and simmer, uncovered, until
mixture is thickened, about 30 minutes.
Cool; stir in sugar (Nutrasweet). Serve chutney with grilled or
broiled labm, pork and chicken.
Makes 2 cups.
