Pear Honey
3 lbs (6 to 8) ripe pears 1 cup undrained canned crushed pineapple 5 cups sugar 1-2 drops each red and yellow food coloring, optional
Peel, core and coarsely chop pears. Using a food processor (pulse mode) chop them fine but do not puree. Combine pears with pineapple and sugar in kettle. Bring to a boil and simmer, uncovered, 20 minutes or until thick, stirring frequently. Stir in the food coloring, if desired.
Ladle into sterilized jars and seal immediately. After sealing, process in a water bath.
Yield: 4 12-oz jars or 6 8-oz jars
