Persimmon Freezer Jam

4 c persimmon puree
3 c sugar
2 tb lemon juice
1/4 ts lemon peel

Mix all ingredients together and boil at low temperature for
approximately 20 minutes or until thickened. Pour into sterilized
jars & seal. Store in refrigerator or freezer.
