Pickled Beets

3 large beets, cooked (about 15-20 min) and peeled, then sliced
into 1/4 inch half moons
1 cup reserved colored water from boiling the beets
1 lemon juice
1/2 grated lemon zest (organic)
1/4 cup balsamic vinegar
2 tbs honey
1 tsp sea salt
2 finely chopped serrano peppers

Fill the sliced beets into a med sized jar (I used an empty mayo
jar). Boil all the other ingredients for about 5 minutes and pour
over the beets in the jar. Add a bayleaf and seal the jar.
Refrigerate.
