Pickled Garlic
2 C distilled white vinegar 2 T salt 2 pounds fresh garlic
Put the vinegar and salt in a non-corrosice saucepan. Bring to a boil and boil 2-3 minutes. Remove from heat and cool.
Separate the garlic cloves and blanch to remove the skin.
Put the garlic in a saucepan and cover with boiling water. Alow to remain for 1 minute and drain.
Arrange in sterilized jars, pour in the vinegar and seal.
Ready in 1 month. Makes 2 pints.
