Pickled Green Onions

PICKLED GREEN ONIONS
1 1/2 cups sugar 1/4 cup water 3/4 cup white vinegar 1/4 teaspoon salt Few drops green food coloring Few drops yellow food coloring 4 cups sliced onions 1/2 teaspoon mustard seed 1/2 teaspoon celery seed
In a saucepan, combine sugar, water, vinegar and salt and bring to a boil, stirring occasionally. Cool. Add a few drops of green and yellow food coloring to syrup to make an attractive green color. In a one-quart container combine onions, mustard seed and celery seed. Pour syrup over all. Cover container and let stand over night. Add more onions to fill container. Refrigerate for 2 or 3 days before serving. Onions will keep in refrigerator for up to 3 weeks.
