Pickled Jalapenos
3 pounds jalapenos 3 c. white vineger 1 c water 3 T. granulated sugar 1 T. pickling salt 15-20 cloves of garlic (because I like them )
Wash peppers. Cut slits in the peppers. Blanch in boiling water 2 min. Immediately immerse in ice water. Drain well. Lightly flatten with a spatula.
Combine all the other ingredients (except garlic) in a large pan. Bring to boil and rolling boil for 5 min. Divide garlic between 5-6 pint jars. Firmly pack peppers in jars leaving 1/2" head space.
Pour hot mixture over-retaing same head space. Press air bubbles out of jar with non-metel utensil (chop stick works great).
Wipe tops clean, lid and band, and hot water bath 10 minutes.
