Marinated Mushrooms

1 lb fresh button mushrooms
1/4 cup chopped onion
1 clove garlic, chopped
1 tablespoon chopped parsley
2 bay leaves
1/4 teaspoon dried tarragon
1/2 cup white wine
1/4 white wine vinegar
2 tablespoons olive oil
1 tablespoon lemon juice
1/4 teaspoon salt

Wash mushrooms. Set on paper toweling to dry. If mushrooms are
too big for a single bite, cut to convenient size. (Note: Mushrooms
will shrink during the cooking process.)

Combine all ingredients in a large saucepan. Bring to the boiling
point. Reduce heat and simmer, covered, for 8-10 minutes. Allow
mixture to cool. Refrigerate until approximately one hour before
serving. Allow mixture to come to room temperature. Drain mushroom
well before serving.
