Pickled Okra
2 pounds fresh, tender young okra pods 5 hot red pepper pods 5 cloves garlic, peeled 4 cups white vinegar 1 cup water 6 tablespoons salt 1 bay leaf 1 tablespoon celery seeds
Wash the okra and pack it into 5 scalded pint jars. Add one pepper and one garlic clove to each jar. Combine the remaining ingredients and bring to a boil. Pour the liquid over the okra and seal. Store in a cool, dark, dry place. Let stand one month before using. Serve cold.
Yield: 5 Pints
