Pickled Onions

12 lbs pickling onions
salt
4 lbs sugar
1 tsp alum
1 tablespoon cloves
1 tablespoon allspice
4 or 5 chillies
3 26-oz bottles white vinegar

Peel onions, put in dish and cover with cold water, add a good
handful of salt, change every day for 3 days, then dry onions. Put
in jars. Disolve sugar and alum in vinegar, add spice etc., and
pour over onions, stir next day with wooden spoon and leave. Keeps
for years - if you can resist the temptation.
