Pickled onions
(not meant for preserving... meant for rapid ingestion!)

1 large red onion, peeled and sliced very thinly
1 T coarse salt or to taste
2 T sugar or to taste
red wine vinegar

Place onion slices in a bowl. Add salt, sugar, and red wine vinegar
to cover

Let marinate for 3 hours and stir approximately every hour or so.
