Pickled Peaches 01

SPICED PICKLED PEACHES
2 pounds brown sugar 2 cups dark vinegar (apple cider vinegar would be a good choice) 1/2 ounce whole cloves 4 quarts whole fresh peaches, peeled 1 ounce stick cinnamon
Boil sugar, vinegar, and spices for 20 minutes. Place a few peaches at a time in the syrup and cook until just tender. Pack peaches into sterilized jars. When jars are full, fill with the juice to cover. Apply seals and snugly hand-tighten the rings; turn the jars upside down to cool. As the hot sugar mixture cools, the jars should seal themselves.
