Pickled Peppers 1 cup cider vinegar 1/4 cup water 2 tsp pickling spice 1/2 tsp pickling salt cloves of peeled garlic peppers Combine vinegar, water, salt and spice in a saucepan and bring to a boil. Remove from heat and set aside for 10 minutes. You can increase the amount of each ingredient to get the total amount that you need. Place 1/2 clove of peeled garlic into jar for each 1/4 pound of peppers. Put peppers into jar. Put another 1/2 clove of garlic for each 1/4 pound of peppers. Return the pickling liquid to a boil. Pour over peppers to within 1/2 inch of rim. Put on lid. These must be processed (canned) if they are not going to be kept in the refrigerator. If you do not process let the jar cool before putting in refrigerator.
