Pomegranate Juice
To prepare the fruit cut the crown end off each pomegranate and lightly score the peel lengthwise down the sides in several places. Submerge in water and soak for at least 5 min. Break the sections apart under water and separate seeds from membranes. Seeds will sink to bottom while pulp and skins float. Skim off pulp and drain seeds in colander.
Place a cup or so of seeds in a heavy duty freezer baggie, press the air out and seal the baggie. Then use a rolling pin to pop the seeds - not so enthusiastically that the baggie breaks, though. Open a corner of the baggie and simply pour the clear juice out. The seed pulp can be dumped and the process repeated.
