Rose Petal Jam
Makes 1 qt

5 ounces scented rose petals, washed and trimmed
2 3/4 cups water
3/4 cups lemon juice
2 1/2 cups sugar
5 T commercial pectin
3 T rosewater

Put the petals, water, lemon juice and sugar into a large saucepan
and heat gently until the sugar is dissolved. Bring to a boil, then
cover and simmer gently for 30 mins. Add the pectin and rosewater,
stir well, then boil hard for 5 mins. Test for a set, if not ready,
test again in 2 mins. Keep testing until a set is reached. Cool
slightly, then pour into warmed, sterilized jars. Cover and seal
when completely cold.

Note: Use petals from unsprayed roses which have not been growing
near a busy road. Cut away the white triangle at the base of each
petal.
