Starfruit Jam
The fruit must be properly ripe. Cut off and discard the sharp edges of the fruit. Cut into slices about three quarters of an inch thick. For two and a half pounds of fruit add one and a half pints of water. Boil until tender, about 15 minutes. Add 1 1/2 pounds of sugar (suggest 1 pound then test for sweetness). Add juice of 2 lemons and a teaspoon of salt. Boil until jam jells. Test at 15 minutes.
Note: The small seeds are considered to improve the flavour.

I made it just like you said. It didnt fall apart as I thought it would so I put it in the blender. It got a little thick but didnt jell. The taste is different but not bad. Ive got lots of these so I will work on the receipe.
