Print this Recipe    Sweet Pickle Relish

1 quart chopped cukes
2 cups chopped onion
1 cup chopped sweet green pepper
1 cup chopped sweet red pepper
1/4 cup salt
3 1/2 cups sugar
2 cups cider vinegar
1 tablespoon celery seed
1 tablespoon mustard seed

Combine cukes, onions, green and red peppers in a large bowl,
sprinkle with salt and cover with cold water. Let stand 2 hours.
Drain thoroughly, press out excess liquid. Combine sugar, vinegar
and spices in a large sauce pot. Bring to a boil. Add drained
vegetables and simmer 10 mins. Pack hot into hot jars, leaving
1/4 inch head space. Adjust caps. Process for your altitude in
boiling water bath

About 8 half pints

I have been using this recipe for the past two years (I've only been canning for two years). Every batch is excellent! They make great gifts too! The only drawback to this recipe (if there has to be a drawback) is chopping up all of the vegetables. I usually make a double batch and then rest my hands the rest of the summer! This relish is really, really good!
