SWEET CUCUMBER PICKLES

3 1/2 pounds cucumbers

1 cup lime
1 gallon water

3 1/4 pounds sugar
1 quart vinegar
2 tablespoons pickling spice
1 tablespoon celery seeds

Wash, cut and weigh cucumbers. Slice 1/4" thick. Soak in lime
water for 24 hours

Wash and soak in clear water. Change water every hour for 4 hours.
Drain well.

Cook vinegar, sugar & spices and pour over uncooked cucumbers Let
stand overnight, covered with dishtowel. Cook uncovered 45 minutes
or until clear.

Pack in jars and process in water bath for 5 minutes for pints or
10 minutes for quarts.

Makes about 7 pints.

NOTES : Put pickling spice in cheesecloth bag household or pickling
lime.
