Print this Recipe    Gram's Zucchini Relish

12 Cups Chopped Unpeeled Zucchini (chop as fine as possible)
4 Cups Chopped Onions
2 Cups Chopped Green Peppers
5 Tblsp Salt

Combine in a large bowl and leave to sit overnight.

Day 2
Rinse ingredients in cold water.

Mix the following in a large kettle
2 1/2 Cups Vinegar
6 Cups Sugar
1 Tblsp Dry Mustard
3/4 Teasp Nutmeg
3/4 Tblsp Cornstarch
3/4 Teasp Tumeric
1 1/4 Teasp Celery Seed
1/4 Teasp Black Pepper

Mix and cook on stove top until the mixture starts to thicken.

ADD THE ZUCCHINI MIXTURE NOW.

Cook for 30 minutes boiling slowly.

Pack in hot jars and seal.

Makes 6-8 pints.
