RELISH (ZUCHINI)

10 cups grated zucchini (or finely minced)
5 cups of minced onions
3 diced green peppers
2 tsp tumeric
3 tbsp celery seed
5 cups white vinegar
3/4 cup pickling salt
1 cup diced celery
2 sweet red peppers (diced)
1 tbsp dry mustard
6 cups white sugar
3 tbsp cornstarch

Prepare zucchini. Mix with salt and veggies. Allow to stand
overnight.

Drain and rinse thoroughly and drain again in colander. Press
mixture to remove excess water.

In large pot, mix remaining ingredients and veggies. Bring to a
rolling boil. Reduce heat. Simmer 20 minutes.

Pour into hot sterilized jars. Recipe gives you 10 small jars plus
3 medium jars.
