Zucchini Pineapple
16 c peeled, seeded, shredded zucchini
1 1/2 cups lemon juice
46 oz unsweetened pineapple juice
1 3/4 cups mild honey
Simmer all ingredients 20 minutes. Divide liquid among 4 qt jars,
then the pulp, so that each jar has the same amount of pulp and
juice. BWB 30 minutes.
