Pressure Cooker Apple Sauce Makes about 2 1/2 cups.
6 med (2 1/2 lbs total) apples, peeled, cored, cut into 1/4 inch thick wedges 1/2 C water 1/2 C sugar 1/8 tsp ground cinnamon 4-inch strip lemon zest
In a 5-7 qt pressure cooker, combine the apples, water, sugar, cinnamon and lemon zest.
Lock the lid in place. Bring to high pressure over high heat. Immediately remove from the heat and quick-release the pressure. Open the lid, tilting it away from you to block any escaping steam.
Discard lemon zest. Stir well to break up the apples. Return pot to a boil. Cook until applesauce has thickened.
