Chicken in the Pot
6 cups water 1 teaspoon salt 1/3 cup barley 2 boneless chicken breast halves, cubed 2 small potatoes, cubed 3 carrots, sliced 1 small onion, diced 2 stalks celery, diced 1/2 cup frozen corn 2 cloves garlic, halved 1/4 teaspoon poultry seasoning 1 bay leaf 1 teaspoon dried parsley 1 teaspoon dill weed 4 chicken bouillon cubes
Place water, barley and salt into cooker. Cover and bring to pressure. Cook for 8 minutes. Add chicken, veggies, garlic, poultry seasoning, bouillon cubes and bay leaf. Cover and bring to pressure. Cook for 10 minutes. Add parsley and dill. Stir before stirring. Serves 6.

I made this soup tonight and instead of using corn I replace it with spinach. I added a little more bouillon and some black pepper. It was very tasty and will be making this more often. My family loved it. Thanks for the recipe.
